Turkey thaw calculator: when should you start?

Sources checked against CDC, Oregon State University Extension and FDA.

Count back from your cooking date for a whole, frozen, unstuffed turkey. The calculator uses a slower one-day-per-four-pounds planning rule; the chart shows published ranges.

Quick answer

Allow about 24 hours per 4–5 pounds for a frozen, unstuffed turkey to thaw in the refrigerator. This planner uses one full day per 4 pounds, rounding up. Enter the bird's weight and cooking date for a start date. Keep it at 4°C (40°F) or below, check progress, and cook within 1–2 days after it fully thaws. These are planning estimates, not a guarantee of thawing. [1] [2]

Plan your refrigerator start date

Use the weight printed on the package before removing anything. This calculator covers a whole, frozen, unstuffed turkey weighing 4–24 lb (about 1.82–10.88 kg). It does not apply to a ready-to-cook frozen stuffed bird. There is no extra buffer hidden in the result.

Enter 4–24 lb, or the equivalent 1.82–10.88 kg.
Choose the date you intend to cook.
Enter the turkey's weight, unit, and cooking date, then select Calculate.

Planning scope: Oregon State Extension's chart is for frozen, unstuffed birds. Inspected, commercially pre-stuffed frozen turkeys should remain frozen until cooking; follow that product's directions. [2]

Refrigerator thawing chart

Refrigerator thawing times for a whole frozen unstuffed turkey
Whole turkey weightApproximate refrigerator thawing time
4–12 lb (about 1.8–5.4 kg)1–3 days
12–16 lb (about 5.4–7.3 kg)3–4 days
16–20 lb (about 7.3–9.1 kg)4–5 days
20–24 lb (about 9.1–10.9 kg)5–6 days

These are Oregon State Extension's approximate thawing ranges for a refrigerator at 4°C (40°F) or below. They are planning times, not refrigerated shelf-life limits. The rounded kilogram ranges help identify the right row; the calculator uses the entered weight's precise conversion. [2]

How the calculator chooses a date

The planner divides the weight in pounds by four and rounds up to a whole day. It then counts back that many calendar days from your cooking date. For example, a 16 lb bird gets four full days; a bird slightly heavier than 16 lb gets five. That uses the slower end of the published 4–5 lb daily estimate. [1]

There is no extra buffer or holding day hidden in the result. Check the turkey as the cooking date approaches. If it thaws earlier, its separate 1–2 day refrigerated holding limit starts when thawing finishes. Brining or changing containers does not create a new thawed-turkey allowance. Our raw turkey guide explains storage before cooking. [1]

A date cannot tell you whether the center is still frozen. Refrigerator temperature, the size of the bird and its starting condition affect progress. Oregon State Extension notes that colder refrigerators take longer. Keep space for the turkey and its tray before you bring it home. [2]

Set up the refrigerator safely

Keep the turkey wrapped and put it in a container that catches leaking juices. Place raw poultry below ready-to-eat food. Check the appliance temperature with a refrigerator thermometer. A calendar estimate assumes continuous refrigeration; a cold reading now cannot establish how the bird was handled earlier. [1] [3]

Do not thaw on a countertop, in a garage or on a porch. Even while the center remains frozen, the outside can warm enough for germs to multiply. Freezing does not reliably kill those germs; they can become active again after thawing. Never use an overnight counter thaw to catch up with the schedule. [1] [3]

Do not taste or smell the turkey to decide whether it is safe. Those checks cannot prove that a mishandled bird is safe. [3]

If your start date has already passed

The result will flag a missed start date. That is a reason to choose another safe method or change the meal plan. It is not a prediction that a turkey already sitting in your refrigerator is unsafe or that thawing is complete. Check how long it has actually been thawing and use the source instructions below.

For cold-water thawing, CDC says to enclose the bird in a leakproof bag, fully submerge it in cold tap water, and change the water every 30 minutes. Allow about 30 minutes per pound and cook immediately after thawing. This requires active attention throughout; it is unsuitable as an unattended overnight method. [1]

The refrigerator's extra 1–2 day holding allowance does not transfer to cold-water or microwave thawing. Microwave directions depend on the appliance and bird size, and CDC also requires immediate cooking afterward. If reliable temperature history is missing, do not treat a calculated date as evidence the turkey is safe. [1] [3]

FAQs

Does this calculator include brining time?

No. The result estimates refrigerator thawing only. Plan any refrigerated brining within the turkey's remaining safe holding period after thawing; do not add a fresh 1–2 days after brining. See our turkey brining guide for the method and limits.

Can I thaw a turkey without JavaScript?

Yes. Use the chart above, or allow a full day per 4 pounds and round upward for planning. Count back from the cooking date, starting no later than your intended cooking time of day. Keep checking thawing progress and refrigerator temperature.

Does a still-frozen center make counter thawing safe?

No. The surface can warm while the inside stays frozen. Thaw under refrigeration, in cold water with the required water changes and immediate cooking, or using your microwave manufacturer's instructions with immediate cooking. A frozen center cannot prove safe handling.

Your next step

Check the package weight, clear a lower refrigerator shelf and set a reminder for the calculated date. Recheck the bird before cooking day so you can change the plan safely if it is still frozen.
