Quick answer
Refrigerate opened prepared horseradish and keep it tightly covered. FoodKeeper gives jarred horseradish 3–4 months after opening as a quality guide. Follow a shorter product direction. A jar losing its sharp bite can reflect declining quality; flavor is not proof that it is safe. FoodKeeper and Silver Spring

The root, the prepared jar and cream sauce differ
| Product or state | Guidance |
|---|---|
| Unopened prepared horseradish | Follow its label. A jar sold refrigerated should remain cold. |
| Opened commercial prepared horseradish | FoodKeeper: 3–4 refrigerated months after opening for quality; product directions take priority. |
| Fresh whole root or homemade preparation | This jarred-condiment guide does not establish its keeping period. |
| Creamy sauce or a dish containing horseradish | Follow the exact product or finished-food guidance. |
Prepared horseradish usually contains grated root and vinegar. A creamy sauce can have a different base and processing. Grating a root at home and adding vinegar does not reproduce a commercial product's validated conditions.
Keep the dates separate
FoodKeeper's jarred-horseradish entry also lists 12 months refrigerated from purchase. That is a different field from its 3–4-month after-opening entry. It is not 12 months beyond the printed date, and the two periods are not consecutive allowances. Neither grants pantry storage to a refrigerated product. FoodKeeper data
Keep the printed date and opening date together. Count from the first opening rather than the most recent serving or transfer into a clean jar. If the package specifies an earlier date or shorter opened period, use that advice.
Cold storage preserves the bite
Silver Spring explains that horseradish's pungent compounds fade with time and exposure to air. Its advice to keep prepared horseradish cold and tightly covered helps preserve flavor. Take out a small serving, close the jar and return it to the fridge. Silver Spring FAQ
Do not leave the jar warm to “test” whether it still tastes strong. The opening date and actual storage history tell you more than repeated tasting. Keep refrigerated foods at 40°F (4°C) or below. FDA storage guidance
FAQs
Does milder flavor mean it has spoiled?
Not necessarily: fading heat can be an age-related quality change. It cannot establish the absence of contamination or excuse storage contrary to the label. Discard moldy or otherwise suspicious food without tasting it.
Can I freeze prepared horseradish?
Silver Spring describes freezing as an option, but the inspected advice establishes no precise frozen or post-thaw period. Follow your actual package rather than treating a missing number as a ban or an unlimited allowance.
Can extra vinegar refresh an old jar?
No storage extension is established by adding vinegar. It cannot reverse unknown handling or contamination. If you mix horseradish into sour cream, mayonnaise or another dish, use that preparation's own guidance; the prepared jar's period does not transfer to the mixture.
