Quick answer
Plain, commercially bottled apple cider vinegar can keep for years when stored correctly. A passed best-by date alone does not mean it needs throwing away, although flavor and appearance can change. This assumes a sound bottle, a tight cap and no contamination or added water. Homemade vinegar, flavored blends and diluted drinks need their own guidance. Iowa State Extension

What to check on your bottle
| Situation | Useful guidance |
|---|---|
| Plain commercial vinegar for cooking | Age alone is generally a quality question; check its condition and label. |
| American Vinegar Works raw cider vinegar | The maker recommends two years from purchase for best flavor. |
| Opened bottle | Keep tightly capped, cool and away from sunlight; opening does not create a universal new shelf life. |
| Vinegar for home canning | Use the strength and conditions required by a research-tested recipe. |
The American Vinegar Works period is that maker's flavor recommendation, not a safety deadline for every vinegar. Its FAQ says refrigeration is generally unnecessary; chilling a nearly empty bottle used slowly can help preserve flavor. Follow your own label. Maker storage advice
Cloudiness and mother are not automatically spoilage
Unfiltered vinegar can develop the mother, a gelatinous sheet or strands formed during fermentation. Penn State explains that it is harmless to eat and can be filtered out for texture. Sediment and gradual darkening can also be normal aging changes.
That does not make every unfamiliar growth mother. Discard vinegar with visible mold, a suspicious odor, foreign material or an uncertain condition. Filtering is not a way to rescue spoiled vinegar, and tasting cannot establish safety. Penn State Extension
Pour into a clean cup, replace the cap and keep water out. Do not pour leftover dressing back into the bottle: once mixed with other ingredients, it no longer has the same storage conditions.
For canning, check more than the date
NCHFP recommends commercial white or cider vinegar labeled 5% acidity for its pickling guidance. Follow the research-tested recipe without changing the proportions of vinegar, water and food. Unknown-strength or homemade vinegar is unsuitable for that substitution. NCHFP pickling guidance
Penn State additionally advises proper storage and use within the best-by date for unfiltered commercial vinegar used in preservation. A fresh, clearly labeled bottle is a straightforward choice. Suitability for seasoning dinner does not establish suitability for canning.
FAQs
Does apple cider vinegar need refrigeration?
Plain vinegar generally does not. Keep it cool, dark and tightly capped, and follow any specific bottle instruction. Optional chilling for flavor is different from a refrigeration requirement.
Is cloudy apple cider vinegar bad?
Cloudiness, sediment or recognizable mother can be normal. If you cannot tell whether a growth is mother or mold, replace the bottle rather than tasting it.
Can I use it after its best-by date?
Often, for ordinary cooking when correctly stored and uncontaminated. Home canning requires the separate acidity, recipe and product-date checks above.
