Quick answer
Commercial rice vinegar keeps well, but your bottle's date and storage directions matter more than a universal expiry countdown. Marukan recommends refrigeration after opening for freshness. Its two-year shelf-life statement does not say opening starts another two years. Plain vinegar, seasoned blends and rice wine need different advice. Marukan FAQ

Read the right label
| What you have | Which advice applies? |
|---|---|
| Marukan rice vinegar | Cool, dark storage; refrigerate after opening for freshness. Use the package date rather than inventing an opening-based two-year period. |
| Another plain or seasoned rice vinegar | Follow that exact bottle's date and after-opening instructions. |
| Rice wine, homemade vinegar or a prepared dressing | This guide does not establish its storage life. |
Seasoned rice vinegar can contain added sugar, salt and water. It is not simply another name for plain vinegar, and rice wine is a separate alcoholic ingredient. Avoid transferring directions between similar-looking bottles. Marukan and Mizkan explain the differences.
A US “Best if Used By” date describes expected flavor and quality. It does not inspect the bottle or override storage directions. A passed quality date alone is not proof of spoilage; an unexpired date cannot clear contamination. FDA date guidance
Keep the bottle in good condition
Close the cap, protect it from heat and sunlight, and keep water out. Do not dilute a nearly empty bottle to stretch it. Marking the opening date helps you follow any opened-use period, while leaving the printed date visible. Iowa State Extension
If the maker recommends refrigeration, follow that recommendation. There is no need to choose between a sweeping “vinegar lasts forever” claim and a sweeping “all opened vinegar must be discarded after six months” rule: neither describes every product.
Cloudiness needs context
Vinegar can develop sediment, haze or a mother without automatically being spoiled. That general observation cannot identify an unknown growth in your bottle. Ask the manufacturer if you cannot match the change to its product guidance; do not filter a moldy or contaminated bottle and assume it is restored. Iowa State Extension
FAQs
Can rice vinegar replace vinegar in a canning recipe?
Only when the tested recipe specifies it. Standard home-pickling guidance calls for vinegar of known acidity, commonly 5%. Do not substitute a milder rice vinegar or alter vinegar-to-water proportions because it tastes sour. This guide provides no acidity-adjustment method. NCHFP
Does refrigeration restart the shelf life?
No. Moving a bottle into the fridge does not create a new manufacture, opening or printed date. Follow the applicable package instructions.
Does “seasoned” mean it has the same storage directions?
No. Check the particular product. Added ingredients and manufacturer directions can differ; a plain-vinegar recommendation does not settle a seasoned blend's handling.
