Quick answer
Keep packaged French fries at 0°F (−18°C) or below, and use the bag’s date for best quality. Opening does not create a universal new expiry period. Once cooked, promptly refrigerated fries generally last 3–4 days at 40°F (4°C) or below.
This guide covers commercially frozen potato fries. Fresh-cut potatoes and cooked fries have different storage needs.

Which fries are you saving?
| What you have | What to do |
|---|---|
| Unopened, continuously frozen bag | Follow the package date and frozen-storage directions. |
| Open bag, remainder still frozen | Close securely and return to the freezer promptly. |
| Accidentally thawed fries | Check the exact manufacturer’s instructions before use or refreezing. |
| Cooked leftovers | Refrigerate promptly; generally use within 3–4 days. |
Keep the package instructions
McCain USA recommends using its frozen products within 12 months of purchase for taste and texture, while checking the pack’s date. That is a brand-specific quality recommendation, not an extra year after opening or after the printed date. Another brand may give different advice.
Take out only the portion you need. Remove excess air, close the bag securely, and put it back before cooking dinner. McCain suggests an airtight freezer-safe container for longer storage after opening. Keep the date and cooking panel if you transfer the food.
FoodSafety.gov’s continuous-freezing guidance separates safety from quality: properly handled food can remain safe while continuously frozen, although flavor and texture decline. Freezing does not repair earlier mishandling.
If the bag thawed
McCain USA says not to prepare or eat its potato products accidentally left out to thaw. Follow that instruction for its products. Do not replace it with the more permissive general advice for an outage.
FoodSafety.gov generally permits refreezing food that still has ice crystals or remains at 40°F or below, with possible quality loss. That guidance does not override stricter product directions or establish the earlier history of a bag that has already refrozen. The vegetable chart’s six-hour exception is not a blanket allowance for manufactured fries.
For another brand, check its label or contact the maker about the exact product. If safe handling cannot be established, discard it. Never taste fries to test safety.
After cooking
Put leftovers in a shallow container and refrigerate within two hours, or one hour above 90°F (32°C). Do not wait for them to become cold on the counter. Reheat safely stored leftovers to 165°F (74°C); this is a leftover instruction, not the initial cooking temperature for every frozen fry.
FAQs
Are frozen fries ready to eat?
Do not assume so. McCain USA says its products need further cooking. Follow your bag’s complete method, quantity and appliance directions.
Does freezer burn make fries unsafe?
Freezer burn alone affects quality. It does not clear separate thawing or contamination concerns. Discard moldy or suspicious-smelling food; normal smell cannot prove safety.
Can an air fryer rescue fries left out overnight?
No. Discard mishandled perishable food. Reheating cannot reliably make an unsafe storage history acceptable.
