Quick answer
Keep commercially frozen fish sticks at 0°F (−18°C) or below and follow their package's quality date. After cooking, refrigerate promptly and use leftovers within 3–4 days at 40°F (4°C) or below. A thawed factory product needs a separate check: Gorton's says to discard its thawed products rather than cooking or refreezing them. Gorton's FAQ · USDA cooked-fish guidance
This guide covers packaged commercial fish sticks or fish fingers, not homemade raw sticks or fresh fillets.

Keep the product states separate
| What you have | What to follow |
|---|---|
| Unopened or partly used frozen box | Its package date, frozen-storage and cooking directions. |
| Thawed Gorton's product | The maker says discard, without cooking or refreezing. |
| Another thawed brand | Its own instructions and safe temperature history. |
| Promptly refrigerated cooked sticks | Three to four days at 40°F (4°C) or below. |
FoodSafety.gov distinguishes freezer quality from safety: food kept continuously at 0°F (−18°C) or below can remain safe indefinitely if safe when frozen and subsequently handled correctly. This does not clear a thawed or previously mishandled product. Federal cold-storage chart
Gorton's says its printed best-if-used-by date is 15–18 months from production for flavor and quality. That does not add another 18 months after purchase or establish a universal rule for every brand. Save the wrapper or photograph its full label before discarding the box.
Golden breadcrumbs do not prove doneness
Gorton's Crunchy Breaded Fish Sticks, 18 count, are labeled uncooked and require 165°F or higher internally. FDA's general 145°F seafood guidance does not replace a higher temperature specified for a packaged product. Follow the exact package's method, quantity, arrangement and any standing time. Gorton's product directions
Appliance advice differs too. This Gorton's product does not recommend microwaving; that is not a blanket instruction for all brands. Use a suitable thermometer and follow its instructions for measuring a thin piece's center rather than touching the hot tray.
If the freezer failed
Do not deliberately thaw a cook-from-frozen product on the counter. Follow stricter maker directions before considering general refreezing advice. FoodSafety.gov's outage chart says to discard seafood exposed to 40°F (4°C) or above for more than two hours. If the temperature history is unknown, smell cannot establish safety. FAQs
When should cooked leftovers go in the fridge?
Within two hours, or one hour above 90°F (32°C). Put them in a covered container, date them and use within three to four days. Reheat leftovers to 165°F throughout.
Does opening the box start a leftover clock?
No, if the uncooked sticks remain frozen. Protect them in airtight freezer packaging and keep their original label. Cooked or thawed products are separate states.
Are freezer-burned fish sticks unsafe?
Freezer burn alone affects quality. It does not prove the food stayed cold enough. Discard suspicious food and never taste it to check an unsafe or uncertain history.
