Signs Shrikhand has gone bad
- Mold spots of any colour on the paste.
- Yeasty, alcohol-like smell.
- Water pooling with a grainy, curdled texture.
Still good if
- A little whey separation that mixes back in, with a normal sweet-tangy smell.
Discard immediately if
- Any visible mold
- Sour, yeasty, or fizzy character
- Left out of the fridge more than 2 hours in warm weather
Why guidance varies
Shrikhand is strained (hung) curd with lots of sugar, so its lower moisture and high sugar slow bacteria compared with plain curd — but surface mould and serving-spoon contamination can still spoil it.
