What is the danger zone temperature for food safety?

Reviewed 2026-07-24

The food-safety danger zone is 40°F to 140°F (4°C to 60°C). Harmful bacteria can multiply rapidly in this range, so perishable food should be refrigerated within two hours—or one hour above 90°F (32°C).
