Quick answer
Use or freeze raw ground turkey within 1–2 days in a refrigerator at 40°F (4°C) or below. For freezer quality, plan on 3–4 months at 0°F (−18°C) or below. The refrigerator limit is short even when the turkey is still in its original package. FoodSafety.gov storage chart
When you unpack the shopping, decide whether the turkey is for tomorrow’s dinner or the freezer. If you bought it on Monday for a weekend batch of meatballs, freeze it now.

Storage times and conditions
| State | Required condition | Recommended handling |
|---|---|---|
| Raw ground turkey | Refrigerator at or below 40°F (4°C) | Cook or freeze within 1–2 days |
| Raw ground turkey, frozen | Continuous storage at or below 0°F (−18°C) | 3–4 months for best quality |
| Cooked turkey burgers, meatballs, or crumbles | Promptly chilled; refrigerator at or below 40°F (4°C) | Use within 3–4 days |
| Thawed in cold water or microwave | Safe thawing procedure | Cook immediately |
| Raw turkey out of refrigeration | Ordinary room temperature | Maximum 2 hours; 1 hour above 90°F (32°C) |

These times assume the turkey stayed safely cold. A warm delivery, power outage, or contamination during preparation can change the decision.
A practical system for family packs
Before opening a family pack, work out how much you need for the next meal. Put the remainder into meal-size freezer packages, label them with the contents and date, and keep the work brief. Flattening a portion into a manageable shape can make it easier to organize, but do not rely on its shape to tell you when it has thawed.
Keep raw turkey separate from salad ingredients, bread, and other foods that will not receive a cooking step. Use a separate board, and wash tools and surfaces after contact. Do not rinse raw turkey in the sink. CDC's ground-turkey handling guidance
If you shape patties or add seasoning, keep the original purchase date on the container. The mixture still needs to be cooked within the raw turkey’s storage window.
What to do when plans change
You bought it yesterday, but dinner is cancelled. If it has stayed properly refrigerated and remains within the recommended window, freeze it rather than letting it drift into the following week. Keep the package's handling directions with the portion or photograph them for reference.
You need frozen turkey tonight. Refrigerator thawing is the simplest planned approach. For a quicker method, use cold water with a leakproof package, replacing the water every 30 minutes, or use the microwave's defrost function. Cook immediately after either quick method. Never thaw it on the counter. FDA thawing guidance
A grocery delivery sat outside. The two-hour room-temperature limit becomes one hour when the air is above 90°F (32°C). Count time without effective refrigeration, not merely time after you carried the bag indoors. If the turkey exceeded the limit or you cannot establish a safe history, discard it. FDA refrigeration guidance
What the freezer date means
The 3–4-month recommendation concerns eating quality. Properly handled food continuously frozen at the recommended temperature does not become unsafe simply because that period has passed. However, freezing does not eliminate most bacteria, so thawed meat still needs careful handling and cooking. FDA freezer facts
For longer storage in retail wrapping, add an airtight outer layer. Label homemade portions clearly so a frozen block of turkey does not get confused with cooked meat. FDA packaging guidance
Use a thermometer when you cook it
Ground turkey needs 165°F (74°C) internally, checked with a food thermometer. Do not substitute the lower target for ground beef or pork. Check the food you are cooking, not the color of the pan juices or the browned surface. FoodSafety.gov cooking chart
After cooking, divide leftovers into shallow containers and refrigerate promptly. Date cooked portions and use them within 3–4 refrigerated days. FoodSafety.gov cooling guidance
Discard suspicious-smelling or visibly spoiled meat. Also discard turkey with an unsafe storage history even if it appears normal; appearance and odor cannot establish the absence of harmful bacteria. FDA storage guidance
FAQs
Is an unopened package okay after five days?
Do not assume so. Five days exceeds the general raw ground-turkey refrigerator guidance. An intact seal is not a substitute for the recommended home-storage time.
Can I tell a turkey burger is done when it is brown?
No. Use a thermometer and the poultry target above. Browning is not a measurement of the center's temperature. FDA on judging doneness
Can I rinse old turkey and cook it well?
No. Washing spreads contamination, and cooking is not a dependable rescue for temperature-abused food because some toxins can survive heating. Discard it instead. CDC handling guidance, FDA explanation
