How long do liquid egg whites last after opening?

Check your liquid egg-white carton before choosing a deadline. Compare the USDA fallback, Eggland’s Best instructions and freshly separated whites.

Quick answer

Follow the after-opening instructions on your exact refrigerated carton. If none are available, USDA's general advice for opened liquid egg products is three days at 40°F (4°C) or below. Eggland's Best specifies seven refrigerated days for its own 100% Liquid Egg Whites. That is a product-specific instruction, not a seven-day allowance for every brand. USDA egg-product guidance

All these windows assume continuous refrigeration at 40°F (4°C) or below. They do not cover dried powders or plant-based egg replacements. Federal cold-storage chart

A broad “3–7 days” range leaves you guessing. Look at your carton before opening it and write the opening date beside its storage panel. Respect its printed use-by instructions too; opening near that date does not automatically add another week. If the pack and maker website conflict, follow the shorter instruction and ask the maker to clarify.

Keep it cold between pours

Replace the lid and return the carton promptly to a thermometer-checked fridge. Use clean measuring cups and utensils, and wash surfaces that touched raw egg. A sealed refrigerated carton still needs cold storage before opening.

Discard perishable egg whites left out for more than two hours, or one hour above 90°F (32°C). Cooking does not make a carton with unsafe storage history worth keeping. A future printed date cannot undo time spent warm. FDA safe-storage advice

Visible mold or a bad smell means discard. The reverse is not proof of safety: harmful bacteria may be present without obvious changes. Eggland's Best says slight cloudiness and a thinner consistency can be normal for its whites, but that does not extend its storage window.

Check before freezing

Eggland's Best permits freezing its unopened whites for up to a year but explicitly advises against freezing or refreezing them once opened. Do not apply a raw-shell-white freezer rule to that carton. Maker freezing instructions

Freshly separated raw whites are different: the federal chart gives 12 months for best quality at 0°F (−18°C) or below. For other commercial products, follow their own freezing directions.

FAQs

Can I use liquid egg whites in a shake?

Choose a pasteurized product suitable for raw use and follow its instructions. FDA recommends pasteurized egg products for preparations served raw or undercooked. Ordinary unpasteurized shell whites are different.

How long do cooked egg whites last?

Promptly refrigerated cooked egg dishes generally keep three to four days at 40°F (4°C) or below. Only cook whites that still meet their storage instructions.

What if I forgot the opening date?

The printed date cannot reconstruct it. If you cannot establish a safe opening and refrigeration history, discard the carton rather than relying on smell.
