Opened artichoke hearts belong in the refrigerator, but their storage time depends on the exact product. A plain can and a jar of marinated hearts can have very different instructions, even from the same brand. Keep the package and follow its after-opening limit rather than assuming every jar lasts a month.
This guide covers commercially processed, shelf-stable cans and jars. Fresh globe artichokes, refrigerated deli antipasto, homemade preserves and spinach-artichoke dip need separate guidance. For whole fresh buds, see our fresh artichoke storage guide.

How long do they last after opening?
These are product-specific examples, not interchangeable limits:
- Always Fresh canned artichoke hearts, 400g: Transfer to a clean, dry, airtight container, refrigerate below 4°C and use within three days. Its ingredients include water, salt and an acidity regulator. Always Fresh canned hearts
- Always Fresh marinated artichoke hearts, 230g: Refrigerate and consume within three weeks of opening. This recipe contains water, sunflower oil, vinegar and seasonings. Always Fresh marinated hearts
- Coop artichoke hearts in oil, 280g net/165g drained, item 3020710: Refrigerate after opening and consume within seven days. The ingredients include vinegar, sunflower oil and olive oil. Coop product information
Those differences are a reason to read your own label, not average the numbers. Formulations and instructions can change, so a different pack size, country or current label may not match an online example.
If an ordinary can has no after-opening timeframe, three refrigerated days is a cautious fallback from Clemson Extension's general guidance for opened canned vegetables. It is not a tested shelf life for every marinated recipe. For a jar with unclear directions, check the manufacturer's advice before planning longer storage. Clemson Extension
Understand the packing liquid and acidity
These descriptions overlap. Water or brine describes the packing liquid. Marinated hearts can contain water, oil, vinegar and seasonings. A water-packed product can also contain added acid, as the Always Fresh canned example shows.
“Acidified” has a more specific food-processing meaning. FDA's definition depends on the finished food's equilibrium pH and water activity. Seeing citric acid on an ingredients list does not tell you those measurements or establish how long the opened product will keep. FDA's acidified-food definitions
Oil is not a reason to ignore refrigeration. The two oil-containing products above have different limits. Likewise, a metal can does not automatically mean one storage time and a glass jar another. The manufacturer's directions are more useful than the container material or a guess about acidity.
Store the remainder as soon as you open it
Check your refrigerator with an appliance thermometer. Keep it at 40°F (4°C) or colder, and follow a stricter temperature on the product, such as Always Fresh's below-4°C instruction. FDA storage guidance
Transfer canned leftovers when the maker directs you to, using a clean, covered food-storage container. Keep a jar tightly closed. Write the opening date on the lid or container so the printed best-before date does not become your only reference.
Serve portions with a clean utensil and refrigerate the rest promptly. Keep ready-to-eat hearts separate from raw meat and its juices. Do not leave a jar on the table throughout a long meal just because it came from the pantry. FDA food-storage basics
Follow the maker's directions about keeping hearts covered by liquid. Cento, for example, gives brand guidance about covering remaining jarred products with water or oil according to how they were packed. Do not turn that advice into a universal recipe for diluting every brand's brine or extending its storage window. Cento storage FAQ
What does the date on an unopened jar mean?
Store shelf-stable, unopened artichoke hearts in a cool, dry cupboard away from direct heat. Clemson pantry guidance
In the United States, FDA describes best-if-used-by dates as quality guidance. A properly stored product does not automatically become unsafe on that date. In Australia and New Zealand, FSANZ likewise distinguishes best-before quality dates from use-by dates for safety. Do not treat a genuine safety use-by date as optional. FDA date labels, FSANZ date labels
There is no dependable extra number of months to add after a best-before date for every artichoke product. Its formulation, processing, package condition and storage history matter. If you cannot interpret a code, check the brand's instructions rather than treating it as an expiry date; Cento provides a way to ask about its traceability codes. Cento date-code FAQ
Opening adds a separate limit; keep any earlier applicable package deadline. A best-before date next year does not give an opened jar another year in the refrigerator.
When should you throw artichoke hearts away?
Do not use food from a leaking or bulging container, a cracked jar, or a package with a compromised seal. Discard hearts with mold, an abnormal odor or spurting liquid on opening. Do not taste suspicious food to check it. Clemson's canned-food warning signs
A normal smell does not prove safety. FDA notes that illness-causing organisms need not produce visible spoilage or an unusual taste or smell. Storage history and handling still matter. FDA storage guidance
Common questions
What if an opened jar sat out overnight?
If a jar labeled for refrigeration sat out overnight, discarding it is the cautious choice when its safety is uncertain. Oil or vinegar on the label is not enough to establish a safe counter-storage period. This is conservative handling advice, not a tested time limit for every marinated recipe. FDA label and storage guidance
Does adding oil or vinegar start the storage time again?
No. Do not use a homemade addition to override the original opening date or the manufacturer's limit. Adding liquid is not evidence that you have recreated a validated commercial preservation process.
What if I forgot the opening date?
The best-before date cannot establish how long the jar has been open. If you cannot establish that it was stored within the applicable refrigerated timeframe, the safer choice is to discard it. For the next jar, mark the opening date immediately and choose a size you can finish within its stated limit.
